TEA SPECIALIST CERTIFICATE August 24 - 25, 2009 January 11 -
12, 2010
A comprehensive course covering the essential elements of understanding
tea. This certificate will be offered over a two day period at The Tea
Emporium. Students will be required to complete a written test at the end
of this course in order to quality for the Tea Specialist Certificate.
Each day will consist of class lecture, discussion and extensive tastings.
Course Content:

DAY 1 - 10:00 - 5:00
Students will be provided with a concise overview of how to define tea, how
tea is processed and where it comes from as well as the difference between teas
and tisanes. We will examine the principals of sensory examination and
taste a variety of different leaf and tea styles using a Sensory Evaluation
Worksheet. Students will also learn about the historical origins of tea.
DAY 2 - 10:00 - 5:00
Students will be provided with an understanding of the tea grading system as
well as the evolution of tea and its social impact throughout the world.
We will discuss the health benefits that have been associated with tea and the
merits of some of the claims made. Students will also learn how tea is best
prepared and how to write a tea menu.
